Featured Recipe: Ethiopian Doro Wat
Doro Wat is a rich and flavorful Ethiopian chicken stew that's cherished for its aromatic spices and complex layers of taste. This iconic dish is often served during festive occasions and is enjoyed with injera, a traditional sourdough flatbread. Get ready to embark on a culinary journey to the heart of Ethiopia with our Doro Wat recipe.

Ingredients:
- 1 whole chicken, cut into pieces
- 2 large onions, finely chopped
- 4 cloves of garlic, minced
- 1-inch piece of ginger, minced
- 2 tablespoons berbere spice blend
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 2 tablespoons butter or oil
- 1 cup chicken broth
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Hard-boiled eggs (optional, for garnish)
- Fresh cilantro or parsley, chopped (for garnish)
Instructions:
- In a large pot, heat the butter or oil over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic and ginger, and cook for an additional 2 minutes until fragrant.
- Add the berbere spice blend, paprika, cumin, cinnamon, cardamom, and cloves. Stir well to coat the onions and spices with the oil.
- Place the chicken pieces into the pot and brown them on all sides, ensuring they are coated with the aromatic spice mixture.
- Pour in the chicken broth and tomato paste. Season with salt and pepper to taste. Give everything a good stir.
- Cover the pot and let the stew simmer on low heat for about 45 minutes to 1 hour, allowing the flavors to meld and the chicken to become tender.
- If desired, add hard-boiled eggs to the stew during the last 15 minutes of cooking to soak up the rich flavors.
- Serve the Doro Wat hot with injera or rice. Garnish with chopped cilantro or parsley for a fresh touch.
